Behavior cannot be disentangled from philosophy, it's the application of the philosophy (unless someone is non corpos mentis). The Jedi mouth pious platitudes to justify all kinds of horrific actions. Just remove those oh-so-shiny plastic sabers and translate their doings into a historical setting and it becomes apparent.
There's no order left in Episode IV (so Kenobi can't get away with stealing children by arms-enforced authority) and he manipulates Luke blatantly by lying to him about his father and his sister so that he can turn him into yet another tool. And Kenobi, the "epitome" of Jedihood first mutilates his apprentice, his adopted younger brother, the comrade who repeatedly saved his life, then leaves him burning alive.
